Squash Patties

Ingredients

  • cooking oil
  • salt & pepper
  • 1 egg
  • ½ cup(s) biscuit mix
  • 1 onion (medium)
  • 6 yellow squash

Cut squash and onion into small chunks and simmer in a little water until very tender. Drain well. Mash together and stir in egg. Add biscuit mix, salt and pepper (just enough biscuit mix to hold it together). Cook by spoonfuls in a little oil over medium heat until brown on both sides.
