Squash Rings with Honey-Soy Glaze

  • 3 tablespoons honey
  • 2 1 1/4- to 1 1/2-pound acorn squash
  • 2 teaspoons rice vinegar
  • 1 ½ teaspoons fresh ginger
  • Nonstick vegetable oil spray
  • 1 garlic clove
  • 1 tablespoon reduced-sodium soy sauce

Preheat oven to 450°F. Line large baking sheet with foil. Spray with nonstick vegetable oil spray. Cut off both ends of each squash. Cut each squash crosswise into 4 rings.
