Ingredients

  • 1 ½ pounds red or Yukon gold potatoes (4 or 5), pierced several times
  • 3 ½ teaspoons fresh lemon juice
  • 1 teaspoon kosher salt
  • 1 to 1 1/2 pounds flank steak
  • ½ teaspoon black pepper
  • 1 5-ounce bag arugula
  • ½ tablespoon olive oil
  • + 9 more ingredients
    • 1 teaspoon cider vinegar (optional)
    • 2 tablespoons finely chopped fresh chives, plus more for garnishing
    • ½ cup sour cream
    • 1 teaspoon kosher salt
    • 1 to 1 1/2 pounds flank steak
    • ½ teaspoon black pepper
    • ½ tablespoon olive oil
    • 1 teaspoon cider vinegar (optional)
    • 3 ½ teaspoons fresh lemon juice
