  • 2 10-ounce round or butt steaks
  • 2 tablespoons Parmesan cheese, freshly grated
  • 1 ½ tablespoons unsalted butter
  • kosher salt
  • 1 tablespoon garlic
  • freshly ground black pepper
  • 1 tablespoon shallot, minced
