  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1/8 teaspoon freshly ground black pepper
  • 1 tablespoon fresh oregano leaves
  • 1 ½ cups packed fresh parsley leaves
  • ¼ teaspoon kosher salt
  • 1 ¾ pounds skirt steak
  • + 2 more ingredients
    • 1 Vidalia onion, peeled and sliced into 1/4-inch rings
    • 5 garlic cloves, peeled

In a food processor (or by hand), finely chop the parsley, garlic, and oregano. Reserve 1/4 cup of the parsley mixture to use another day and transfer the remainder to a bowl.
