  • ½ cup dried currants
  • ½ cup whole-wheat flour
  • 1/3 cup molasses
  • 1 cup low-fat buttermilk
  • 2 tablespoons chopped walnuts
  • ½ cup all-purpose flour
  • ½ cup yellow cornmeal
  • + 4 more ingredients
    • Vegetable cooking spray
    • ½ teaspoon baking soda
    • ¾ teaspoon ground cinnamon
    • ½ teaspoon salt

Combine the first 6 ingredients in a large bowl, and make a well in center of mixture. Combine buttermilk and molasses; stir well. Add to flour mixture, stirring just until moistened.
