Steamed Fish With Black Bean Sauce

Ingredients

  • 1 tablespoon peanut oil
  • 1 tablespoon light soy sauce
  • 2 tablespoons rice wine
  • 2 tablespoons sherry wine or 2 tablespoons rice wine
  • 1 teaspoon sugar
  • 4 slices ginger, shredded
  • 2 green onions, shredded into 1 ½ inch long pieces

    • 2 tablespoons fermented black beans
    • 1 ½ lbs red snapper
    • 2 thick firm white fish fillets or 1 ½ lbs red snapper
