Ingredients

  • 3 teaspoons dark brown sugar
  • ¼ teaspoon black pepper
  • 2 pounds tomatoes
  • ¾ teaspoon salt
  • ½ Italian frying pepper
  • 1 celery rib
  • 1 well-seasoned ridged grill pan

    • 1 medium onion (1 cup)

    • ½ cup extra-virgin olive oil
    • 3 large slices sourdough
