Stir-Fried Brussels Sprouts with Red Pepper

  • 1 lb. small Brussels sprouts (3 cups)
  • 2 Tbs. peanut oil
  • Kosher salt
  • 1 Tbs. minced fresh ginger
  • 6 medium scallions, thinly sliced
  • ¼ to ½ tsp. crushed red pepper flakes
  • 2 Tbs. rice vinegar
  • + 3 more ingredients
    • 2 Tbs. lower-sodium soy sauce
    • 1 medium clove garlic, minced
    • 1 medium red bell pepper, cored, seeded, and chopped
