Stir Fry Kale and Mushrooms


  • 3 tablespoon(s) olive oil
  • 1 onion, large - chopped
  • 1 clove(s) garlic - chopped
  • 1 cup(s) bread crumbs
  • 3 bunch(s) kale - washed, dried and coarsely shredded
  • 1 package(s) fresh mushrooms, white cap, button or cremini mushroom - washed and sliced
  • salt and pepper, to taste
  • + 1 more ingredients
    • 1/3 cup(s) feta cheese, crumbled on top for garnish, if desired

Heat oil over medium heat in a large stir fry pan. Add onions, garlic and mushrooms; cook and stir until tender. Mix in bread crumbs, and cook until browned, stirring frequently. Stir in kale, and cook until wilted. Serve hot or warm. May garnish with crumbled feta cheese.
