Stone Crab with Mustard Sauce

- ½ teaspoon turbinado sugar
- 1 cup safflower oil
- 5 pounds stone crab claws
- ½ small shallot
- 2 large egg yolks
- 1 large lemon
- 1 tablespoon Dijon mustard
