Ingredients

  • 3 pounds mixed stone fruit
  • ¼ teaspoon pure almond extract
  • 1 ½ cups all-purpose flour
  • 2 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 17 tablespoons heavy cream
  • ¾ cup sugar

    • 1 round cookie cutter (2 to 2 1/2 inches)
    • ½ cup cornmeal (not stone-ground)
    • 2 teaspoons baking powder
    • 2 teaspoons sugar
    • ½ teaspoon salt
    • 1 teaspoon pure vanilla extract

Preheat oven to 400°F with rack in middle. Butter a 3-qt glass or ceramic baking dish. Toss together filling ingredients in a large bowl.
