Strawberry Cheesecake Baked Oatmeal - Hungry Healthy Girl

Ingredients

  • 16 ounces fresh strawberries, sliced (reserve about ½ cup for topping your oats before baking)
  • ¾ cup cottage cheese, Greek yogurt may be a good substitute
  • 1 tablespoon vanilla extract
  • ¼ cup maple syrup, honey would work too
  • 2 eggs, lightly beaten
  • 1 ¼ cups milk, I used unsweetened vanilla almond milk
  • ½ teaspoon salt
  • + 3 more ingredients
    • 2 teaspoons cinnamon
    • 1 ½ teaspoons baking powder
    • 3 cups old fashioned rolled oats, gluten-free if desired

Preheat oven to 375 degrees F. and spray a 9 x 13 baking dish with a natural cooking spray. If you would prefer your baked oatmeal thicker, use a smaller sized baking dish.
