Strawberry-Coconut Cheesecake

Ingredients

  • ½ cup unsweetened shredded coconut
  • ¾ cup graham cracker crumbs
  • 3 1-pint containers strawberries
  • ¼ cup sugar
  • 6 tablespoons unsalted butter
  • 3 8-ounce packages cream cheese
  • 1 cup canned sweetened cream of coconut (such as Coco Lpez)
  • + 7 more ingredients
    • 3 tablespoons cornstarch
    • 1 cup sugar
    • 4 large eggs
    • 4 tablespoons unsalted butter
    • ¼ cup seedless strawberry jam
    • 2 tablespoons water
    • ¼ cup coconut rum (such as Malibu)

Preheat oven to 350°F. Brush 9-inch-diameter cake pan with 2-inch-high sides with 1 tablespoon melted butter. Line pan with parchment paper; lightly brush paper with some of melted butter.
