Strawberry Spinach Salad, 3 Ways

Ingredients

  • 1/8 tsp. black pepper
  • ½ tsp. paprika
  • 1/8 tsp. salt
  • 2 tbsp. balsamic vinegar
  • 2 tbsp. extra virgin olive oil
  • 1 tbsp. chopped fresh or 1 tsp. dried tarragon
  • 1 tbsp. sesame seeds, toasted
  • + 17 more ingredients
    • 2 tbsp. raisins
    • ½ c. celery, finely chopped
    • -Variation #2:
    • honey to taste
    • 1 ½ tbsp. or more apple cider vinegar
    • 3 tbsp. olive oil,
    • -Variation #1:
    • Store-bought: a creamy poppy-seed or raspberry vinaigrette
    • -For the dressing:
    • 1 ½ c. grilled chicken, chopped into small pieces
    • ¾ c. red onion, finely chopped
    • (Optional Ingredients: )
    • 1 ¼ c. cheese (feta, goat cheese, or parmesan - finely chopped or grated)
    • ¾ c. nuts (pecans or almonds - toasted is even better)
    • 1 pint or 2 ½ c. strawberries, de-greened and thinly sliced
    • 6 c. packed spinach (mixed spring greens are a great addition)
