Streusel-Topped Lemon Shortbread Bars

Ingredients

  • Powdered sugar
  • 2 ½ cups sugar, divided
  • ½ teaspoon salt
  • 4 teaspoons grated lemon rind
  • 1 teaspoon baking powder
  • 1 cup cold butter, cut into 1/2-inch pieces and divided
  • 6 large eggs

    • 1 ¼ cups all-purpose flour, divided
    • ¼ teaspoon salt
    • 2 cups all-purpose flour
    • 3 tablespoons sugar
    • 2 egg yolks
    • ½ cup fresh lemon juice

1. Combine first 3 ingredients in a food processor. Add 3/4 cup butter pieces to food processor, and pulse 12 to 15 times or until mixture resembles coarse meal; chill remaining 1/4 cup butter pieces.
