Stuffed Sweet Potatoes Southwestern Style


  • 4 small sweet potatoes
  • 1 teaspoon olive oil
  • 1 small red onion, diced
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • 1 cup canned, chopped tomatoes with juices
