Succotash Salad with Orange Vinaigrette

Ingredients

  • 2 ½ tablespoon(s) orange juice, freshly squeezed
  • 1 teaspoon(s) honey
  • salt and pepper to taste
  • 1 pound(s) fresh green beans, cut into thirds
  • 16 ounce(s) lima beans, frozen
  • 2 ounce(s) pimentos
  • ½ cup(s) red onion, finely chopped

    • VINAIGRETTE DRESSING
    • 3 ears of fresh corn, kernels removed, or 1 can of corn
    • 1 tablespoon(s) fresh basil, chopped--more to taste
    • 4 tablespoon(s) olive oil or canola oil
