Summer Rice Salad with Feta, Citrus, and Mint

Ingredients

  • 30 cherry tomatoes
  • ½ teaspoon ground cinnamon
  • ¼ cup fresh lemon juice
  • ½ cup olive oil
  • ½ cup fresh orange juice
  • 1 ½ teaspoons salt
  • 2 cups white rice

    • 4 cups water
    • 1 cup green onions
    • ½ cup fresh mint
    • 16 ounces feta cheese, crumbled
    • 7 small pickling cucumbers
    • 2 teaspoons grated lemon peel
    • 4 teaspoons grated orange peel

Bring 4 cups water, rice, and salt to boil in heavy medium saucepan over high heat, stirring occasionally.
