Summer Succotash

Ingredients

  • fine sea salt
  • garlic clove
  • olive oil
  • 6 1/2-inch slices crusty bread (use slices from the middle of the loaf)
  • pepper to taste
  • ¼ c arugula leaves
  • 1/3 c fresh basil leaves
  • + 9 more ingredients
    • 1 T red wine vinegar
    • 12 oz grape tomatoes, cut into halves (about 1 1/2 pints)
    • 1 large garlic clove, minced
    • 1 small sweet onion, chopped
    • 1 ½ T olive oil
    • 4 ears sweet corn
    • salt to taste
    • 1 lb fresh baby lima beans, or 1 cup frozen baby lima beans
    • 4 oz sliced bacon

For the Succotash, Fry the bacon in a skillet until brown and crisp. Drain, reserving 1 tablespoon of the bacon drippings. Crumble the bacon.
