Sun-Dried Tomato Pesto Spread
Ingredients
- ¼ cup freshly grated Parmesan cheese
- 2 cloves garlic
- ¼ cup chopped fresh parsley
- ¾ cup boiling water
- 12 sun-dried tomatoes
- 2 tablespoons slivered almonds, toasted
- 1 teaspoon vegetable oil

Combine tomatoes and boiling water in a small bowl; cover and let stand 30 minutes. Drain, reserving 1 tablespoon of liquid. Position knife blade in food processor bowl.
