Sunny Carrot Salad


  • 3 cup(s) shredded carrots
  • 2 cup(s) unsweetened crushed pineapple, drained
  • ½ cup(s) golden raisins
  • 1/3 cup(s) mayonnaise
  • 1/3 cup(s) unsalted sunflower kernels
  • ½ cup(s) sliced almonds

In large serving bowl, combine carrots, pineapple and raisins. Stir in mayonnaise. Cover and refrigerate until serving. Just before serving, add almonds and sunflower kernels; toss to coat.
