Sunny-Side Up Lentil Salad

Ingredients

  • 4 eggs
  • 1 can diced tomatoes
  • 1 cup onion
  • 2/3 cup celery
  • ½ cup carrot
  • 2 ½ tablespoons white wine vinegar
  • 2 teaspoons olive oil
  • + 5 more ingredients
    • 4 cups mixed baby lettuces
    • 2 tablespoons fresh tarragon (or parsley)
    • 1 teaspoon Dijon mustard
    • ¾ cup lentils
    • 1 tablespoon fresh thyme

Boil 3 cups water, tomatoes, onion, lentils, celery, carrot and thyme in a medium saucepan. Reduce heat to medium-low; simmer until lentils are tender, 20 to 25 minutes.
