Ingredients

  • ¾ teaspoon salt, divided
  • 1 garlic clove, pressed
  • 1 medium onion, diced
  • ¼ teaspoon pepper
  • 2 tablespoons vegetable oil
  • 1 small red bell pepper, diced
  • 6 large eggs

    • 1 tablespoon butter
    • 3 (8-oz.) baking potatoes, peeled and shredded (about 3 cups firmly packed)*
