Sweet-and-Sour Stuffed Mustard Cabbage

Ingredients

  • 3 tablespoons fresh lemon juice
  • ¼ teaspoon black pepper
  • 3 tablespoons vegetable oil
  • 1 pound ground chuck (preferably not lean)
  • 1 28- to 32-oz can whole tomatoes including juice
  • 2 teaspoons salt
  • 3 tablespoons water

    • 2 pounds wrapped-heart mustard cabbage (2 heads)
    • 3 tablespoons dark brown sugar
    • 2 teaspoons salt
    • ½ teaspoon black pepper
    • ½ cup dried sour cherries
    • 3 tablespoons long-grain rice
    • 1 large onion (1 lb)
    • ¼ cup onion

Cook onion in oil in a 12-inch deep heavy skillet over moderate heat, stirring occasionally, until golden, 12 to 15 minutes.
