Sweet Apple-and-Chestnut Sauté

Ingredients

  • ¾ cup thinly sliced celery
  • 1 cup cooked, shelled, and coarsely chopped chestnuts (about 1 pound in shells)
  • 1 tablespoon margarine
  • ¼ cup maple syrup
  • 1 large Granny Smith apple, peeled and cut into 16 wedges
  • 1 ½ cups diced onion
  • Thyme sprigs (optional)

Melt the margarine in a large nonstick skillet over medium heat. Add the onion and celery, and sauté 4 minutes. Add chopped chestnuts and apple wedges, and sauté 8 minutes. Add maple syrup, and sauté 1 minute. Garnish with thyme sprigs, if desired.
