Sweet Corn Bread with Mixed Berries and Berry Coulis

Ingredients

  • 1/8 teaspoon grated orange rind
  • ¾ cup all-purpose flour
  • 1 cup fresh blackberries
  • 1 cup fresh blueberries
  • 2 tablespoons water
  • Sauce:
  • ½ teaspoon salt
  • + 18 more ingredients
    • ½ cup frozen fat-free whipped topping, thawed
    • 2 ½ teaspoons granulated sugar
    • 2 tablespoons dark brown sugar
    • ½ cup fresh or thawed frozen blackberries
    • ½ cup fresh or thawed frozen raspberries
    • 2 tablespoons butter, melted
    • 1/3 cup granulated sugar
    • Corn bread:
    • ¾ cup yellow cornmeal
    • 1 tablespoon vegetable oil
    • ½ cup fresh or thawed frozen blueberries
    • Cooking spray
    • 1 large egg
    • Topping:
    • 2 teaspoons baking powder
    • 1 cup fresh raspberries
    • ¾ cup 2% reduced-fat milk
    • ¼ teaspoon orange-flower water (optional)

To prepare sauce, combine the first 5 ingredients in a food processor; process until smooth. Strain berry mixture through a fine sieve over a bowl, reserving liquid; discard solids. Cover and chill.
