Sweet Dumpling Squash With Citrus-Herb Sauce


  • ¼ cup fresh lemon juice
  • ¼ cup fresh orange juice
  • 3 (1-pound) sweet dumplings or other winter squash
  • 1 tablespoon grated lemon rind
  • 1 ½ tablespoons sugar
  • ½ cup water
  • 1 tablespoon margarine
  • + 4 more ingredients
    • ¼ teaspoon dried tarragon
    • 1 tablespoon grated orange rind
    • 1/8 teaspoon white pepper
    • Tarragon sprigs (optional)

Preheat oven to 350°. Combine first 7 ingredients in a small saucepan. Bring to a boil; reduce heat, and simmer until reduced to 1/2 cup (about 10 minutes).
