Sweet Pickled Onions


  • 2 pounds sweet onions (such as Walla Walla or Vidalia) or red onions
  • 4 bay leaves
  • 2 tsp peppercorns
  • 1 tsp mustard seeds
  • 2 tsp fresh ginger, chopped
  • 2 cups apple cider or white vinegar
  • ½ cup water
  • + 2 more ingredients
    • ¾ cup sugar
    • 2 tbsp kosher salt
