Sweet Potato “Tartiflette”


  • 1kg sweet potatoes, peeled
  • 120g chorizo, cut into small cubes
  • 2 shallots
  • 1 garlic clove
  • 100ml dry white wine
  • 100ml double cream
  • 300g cheddar cheese, sliced

Preheat the oven to 180c Slice the potatoes into thin discs and boil for 5-10 minutes. Once they are tender, drain and set them aside to cool.
