Ingredients

  • Pinch cayenne (optional)
  • ¼ tsp. ground nutmeg
  • 3 cups water
  • 3 eggs, separated
  • ¼ tsp. ground cinnamon
  • 2 Tbs. heavy cream
  • ½ cup maple syrup
  • + 8 more ingredients
    • 2-½ tsp. kosher salt
    • ½ tsp. chopped garlic
    • ½ tsp. freshly ground white pepper
    • 2 lb. sweet potatoes, peeled, cut in 1-inch chunks
    • 1-¼ cups stone-ground grits
    • ½ tsp. kosher salt
    • 1 tsp. chopped shallot
    • 2 Tbs. unsalted butter

Put the sweet potatoes in a large pot; cover with water and 1-1/2 tsp. of the salt. Bring to a boil, reduce the heat, and simmer until the potatoes are fork-tender, about 10 minutes.
