Sweet Potato and Spinach Frittata

Ingredients

  • 6 eggs, lightly beaten
  • 1 ¼ cups asiago cheese, shredded, divided
  • ¾ cup medium cheddar, shredded
  • ¼ cup milk, 2%
  • 1 tablespoon butter
  • 3 cups sweet potatoes, peeled, diced
  • 4 cups spinach, coarsely chopped

    • 1 cup tomato, seeded, chopped
    • 1/3 cup sweet onion, chopped
    • ¼ cup flat leaf parsley, finely chopped
    • 1 teaspoon fresh lemon juice
