Sweet Potato Avocado Salad


  • 1 tsp honey or agave
  • Juice of 1 lime
  • Handful fresh cilantro, chopped
  • 1 jalapeno, seeded and finely chopped
  • ½ red onion, finely chopped
  • 2 large avocados, cut into 1" pieces
  • Salt and pepper
  • + 2 more ingredients
    • 3 tbsp olive oil, divided
    • 2 medium sweet potatoes, cut into 1" pieces

Preheat oven to 400. Line sweet potatoes out on a large rimmed baking sheet. Drizzle with 2 tbsp olive oil and season with a generous pinch each of salt and pepper.
