Sweet Potato, Bacon, Spinach Salad W/Fried Eggs


  • 4 slices Italian bread, toasted
  • 1 teaspoon butter
  • 1 garlic clove, minced
  • 1 small onion, diced fine
  • 2 large sweet potatoes, peeled and diced in ½-inch cubes
  • 4 slices maple bacon, diced (or a hickory bacon would work)
  • 3 ounces honey
  • + 3 more ingredients
    • 8 ounces olive oil
    • 4 ounces balsamic vinegar
    • 4 extra large eggs
