Ingredients

  • 12 Corn Tortillas
  • ½ cup fresh cilantro leaves
  • Salt
  • 1 ½ cups sour cream
  • Vegetable oil
  • 2 poblano chiles
  • ½ cup grated Monterey Jack cheese
  • + 10 more ingredients
    • 1 sweet potato (about 12 ounces)
    • ½ cup whole milk
    • 2 small onions
    • 1 cup Griddled Tomato-Chipotle Salsa
    • 8 tomatillos
    • ¼ cup red wine vinegar or fruit vinegar
    • 1 ½ cups vegetable stock, homemade or store-bought
    • 2 jalapeño chiles
    • 1 garlic clove
    • 1 tablespoon vegetable shortening or vegetable oil

Slice one onion into very thin strips. Combine with the vinegar in a bowl and set aside. Chop the other onion coarsely and set aside. In a mixing bowl, whisk the sour cream and milk together.
