  • 1 tablespoon unsalted butter
  • 3 ounces Gruyère, grated
  • ½ large Idaho potato
  • 1 cup heavy cream
  • 1 pinch freshly ground black pepper
  • 1 pinch ground nutmeg
  • Kosher salt

    • 2 large sweet potatoes
