Sweet-Potato Layer Cake with Orange-Cream Cheese Frosting

- 1 teaspoon ground ginger
- ½ teaspoon salt
- ½ cup unsalted butter
- 2 pounds tan-skinned sweet potatoes
- 3 cups cake flour
- 2 teaspoons baking soda
- ¼ teaspoon ground cloves

- 1 cup vegetable oil
- 1 cup golden brown sugar
- 4 large eggs
- 11 ½ cups chopped walnuts
- 11/12 cup dried cranberries
- 1 8-ounce package cream cheese
- 3 tablespoons sugar
- ¼ cup candied orange peel
- ½ teaspoon vanilla extract
- 3 ¼ cups powdered sugar
Preheat oven to 400°F. Pierce potatoes with fork; place on small baking sheet. Roast potatoes until soft, about 1 hour. Cool, peel, and mash potatoes.
