Sweet-Potato Mash

  • ¼ cup whole milk
  • 2 tablespoons unsalted butter
  • 3 large sweet potatoes, peeled and cut into 1-inch cubes (about 4 1/2 cups)

Place the sweet potatoes in a medium saucepan and add enough salted water to cover. Heat to boiling, cover, and cook for 10 minutes or until soft. Drain the potatoes and transfer them back to the saucepan. Add the butter and milk and mash.
