Sweet Potato Oven-Fries with Lemon-Mint Gremolata


  • 2 tablespoons finely chopped flat-leaf parsley
  • 1 tablespoon finely chopped spearmint
  • 5 pounds medium sweet potatoes, each one cut lengthwise into 16 wedges
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon finely chopped lemon zest
  • 3 tablespoons canola oil
  • Salt

    • ½ teaspoon finely chopped garlic
    • 3 tablespoons extra-virgin olive oil
