Sweet Potato Pancakes with Salsa Dip

Ingredients

  • Salsa Dip
  • 1 medium onion
  • 1 medium jalapeño chile
  • 4 large sweet potatoes (about 3 1/2 pounds)
  • 6 tablespoons vegetable oil
  • 2 large eggs
  • 2 tablespoons all-purpose flour
