SWEET POTATO, PARSNIP & CARROT KUGEL

Ingredients

  • 2 parsnips, grated (large)
  • 1 apple, peeled, cored, quarter
  • 2 sweet potatoes, grated
  • 1 teaspoon(s) cinnamon, ground
  • ½ teaspoon(s) nutmeg, grated
  • 4 tablespoon(s) water
  • 2 Eggs, beaten

    • 1 onion, finely chopped

Heat butter in large skillet. Add onion, sauté 3 minutes, stirring occasionally. Combine sweet potatoes, carrots, parsnips and apple in food processor and pulse until you reach your desired texture.
