Sweet Potato-Plantain Bake


  • 7 cups (1/2-inch) cubed peeled sweet potato (about 2 1/4 pounds)
  • 2 cups sliced very ripe plantain (about 1 pound)
  • ¼ teaspoon ground allspice
  • ¼ cup whole pitted dates, chopped
  • ¼ cup slivered almonds, toasted
  • ¼ cup fat-free milk
  • Cooking spray

    • 1/3 cup packed brown sugar
    • ¼ cup low-fat sour cream
