Sweet Potato Pudding

Ingredients

  • 2 ½ cup(s) sweet potatoes - raw, peeled and grated
  • ¼ teaspoon(s) salt
  • ¼ cup(s) maple syrup - any variety
  • ½ cup(s) sugar
  • ¼ cup(s) unsalted butter
  • 1 ½ cup(s) half-n-half
  • 2 eggs

Grease baking dish. Preheat oven to 400°F. Cream butter, sugar and maple syrup. Beat in eggs, salt and half and half. Fold in grated sweet potatoes. Pour into greased baking dish. Bake for one hour. Serve immediately.
