Ingredients

  • 2 teaspoons Dijon mustard
  • 4 pounds sweet potatoes, peeled and cut into 3/4" pieces
  • 1 tablespoon cider vinegar
  • ¾ cup pecan pieces, toasted
  • 1 small red onion, cut into thin wedges
  • 4 thick-cut bacon slices
  • ½ cup golden raisins
  • + 3 more ingredients
    • 1 ½ teaspoons salt, divided
    • ½ teaspoon freshly ground pepper
    • 6 tablespoons olive oil, divided

Combine sweet potato, onion, 2 tablespoons olive oil, and 3/4 teaspoon salt in a large bowl; toss to coat. Arrange vegetables in a single layer on 2 lightly greased baking sheets.
