Sweet-Potato Salad with Ham and Curried Almonds

Ingredients

  • 2/3 cup plus 1 tablespoon olive oil
  • 1 head red leaf lettuce (about 1 pound), torn into bite-size pieces (about 3 quarts)
  • ½ teaspoon salt
  • 3 scallions including green tops, sliced thin
  • ½ teaspoon curry powder
  • 3 tablespoons cider vinegar or red- or white-wine vinegar
  • ¼ teaspoon fresh-ground black pepper
  • + 3 more ingredients
    • 2 pounds sweet potatoes (about 3 large), peeled and cut into 1/2-inch dice
    • 1 ½- pounds piece smoked ham, such as Black Forest, diced
    • 3 tablespoons sliced almonds
