Sweet Potato Wedges with Bacon Vinaigrette
Ingredients
- 1 Tbsp water
- 2 Tbsp maple sugar
- 2 Tbsp Sherry vinegar
- 3 scallions, thinly sliced, reserving sliced greens separately
- ¼ cup extra-virgin olive oil
- ½ tsp black pepper
- 1 tsp salt
- + 2 more ingredients

- ½ lb sliced bacon, cut crosswise into ½-inch-wide strips
- 4 lb medium sweet potatoes
1. Put oven rack in upper third of oven and preheat oven to 450. 2. Peel sweet potatoes, then cut each lengthwise into 6 spears. Cut spears in half crosswise if desired, then arrange in 1 layer in 1-2 large baking pans. 3. Cook bacon in a skillet over moderate heat, until browned and crisp. 4....
