Sweet Potato Wedges with Bacon Vinaigrette

Ingredients

  • 4 lb medium sweet potatoes
  • ½ lb sliced bacon, cut crosswise into ½-inch-wide strips
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup extra-virgin olive oil
  • 3 scallions, thinly sliced, reserving sliced greens separately
  • 2 Tbsp Sherry vinegar
  • + 2 more ingredients
    • 2 Tbsp maple sugar
    • 1 Tbsp water
