Sweet Red Onion Relish


  • 1 tablespoon yellow mustard seeds
  • 3 large red onions, halved and thinly sliced (about 2 1/2 pounds)
  • 4 bay leaves
  • 1 cup light brown sugar
  • 2 tablespoons kosher salt
  • 10 whole cloves
  • 1 cup cider vinegar

1. Combine first 6 ingredients in a medium saucepan, and bring to a boil. Stir constantly until sugar dissolves.2. Add onion, and stir to mix.
