Ingredients

  • 3 cups peeled and grated carrots (about 4 large)
  • ¾ cup chopped pecans
  • ½ cup margarine, melted
  • 1 large egg, beaten
  • ¼ teaspoon ground nutmeg
  • 2 cups peeled and grated Gala apples (about 2 large)
  • 1 teaspoon salt
  • + 4 more ingredients
    • 4 cups peeled and grated sweet potato (about 1 extra large)
    • 1 cup matzo meal
    • ¾ teaspoon ground cinnamon
    • ½ cup sugar

1. Preheat oven to 350°. Arrange pecans in a single layer on a baking sheet. Bake at 350° for 5 to 7 minutes or until lightly toasted and fragrant.
