Sweetbreads Deluxe

Ingredients

  • Toast points
  • 1/8 teaspoon white pepper
  • ¼ cup water
  • 2 to 3 pounds veal sweetbreads
  • 2 tablespoons flour
  • ¾ cup whipping cream
  • 1/8 teaspoon onion powder
  • + 5 more ingredients
    • 1 ½ teaspoons salt, divided
    • ¼ cup butter or margarine
    • ½ cup sherry
    • Paprika
    • 2 tablespoons lemon juice

Place sweetbreads in a large mixing bowl; cover with cold water. Set aside to soak for 1 hour. Drain well; remove and discard white membrane.
