Swiss buns


  • Large baking sheet, buttered
  • Pink food colouring, optional
  • 1 tsp lemon juice
  • 175g (6oz) icing sugar
  • 225ml (7½fl oz) milk, warmed (tepid)
  • Finely grated rind of 1 lemon
  • 2 medium eggs
  • + 5 more ingredients
    • 1 x 7g sachet easy-bake dried yeast (¾oz fresh yeast)
    • 90g (3oz) caster sugar
    • 60g (2oz) butter
    • ½ level tsp salt
    • 500g (1lb) plain flour

1. Sift the flour and salt into a large bowl. Warm it in a low oven for a few mins or in the microwave on High for 30 secs. Rub in the butter, then stir in the sugar and dried yeast.
